Heirloom Kitchen cares about using wholesome, organic ingredients just as much as we care about our completed dishes. Finding those high quality ingredients can be difficult and expensive. Whether it be vegetables, herbs, or meats, it requires being creative and finding ways to use every part of the ingredients at hand, even parts that may seem undesirable to some. Sous Chef Kat Norat specializes in butchering our locally purveyed chickens whenever they are on the menu so that no part goes to waste. We even use chicken feet in our homemade stocks to deepen the flavor and make them more gelatinous! Here, she will teach you where we find our best birds and how to make the most of them.
