If there was a bird that could describe our Chef David Viana, it would be the State Bird… of California. This quail is known for its hardiness and adaptability. Chef David has had a longstanding love affair with State Bird Provisions in San Francisco. For background: in addition to their standard menu, this drool-worthy restaurant on Fillmore Street offers a unique dim-sum style of dining, featuring crafted bites atop wooden carts that are rolled through the restaurant throughout service. Chef will be guiding you all through this mind-blowing, flavorful cookbook featuring both bites and full blown dishes such as duck croquettes with wagon wheel cheese and raisin verjus. After this, we’ll start a countdown ‘til your trip to the West Coast!
