Sweden is considered the Serengeti of the West, famous for the country’s notorious “Big Five”: shrimp, oysters, crayfish, mussels, and lobster. Harvesting these is much like a dream, as the clean cold waters of the North Atlantic act as a natural fattening room for seafood. This allows them to develop a mature, richer flavor. To honor the Big Five, we’ll be mastering the traditional, such as pickled herring and cod fritters, and then we’ll get a little outside the norm with smoked oysters on the half-shell, elevated scallops, and well …we won’t spoil all of the surprises.
