“You’re Abe Froman, the sausage king of Chicago?” Sausage is a staple when it comes to the art (and it IS an art!) of charcuterie. Sausage making is a prime example of efficient butchery: its outcome is the oldest example of prepared food. We love the long world history of these tubed and untubed meats, with recipes that stretch from ancient Rome to the Byzantine Empire. All will be enlightened, then share in the preparation using pork, lamb, and duck—each served up with accompaniments of course. Think pork sausage, lamb merguez, duck sausage, and the like.
